On-line event, free and open access, in collaboration with the University of Milano-Bicocca (SUrPLaS project).
A virtual journey into the cheese production chain, aimed at raising awareness of the strong environmental impact of a very common food on our tables. The production of 1 kg of cheese requires up to 10 kg of milk and generates 9 kg of whey as the main waste/by-product. Sugars and proteins contained in whey are valuable components that can be recovered and up-graded in different ways: from "recycling", a traditional way of reducing economic and environmental burden, to "upcycling", the application of innovative ideas and technologies to generate new goods from waste, thus improving economic competitiveness and environmental sustainability of traditional production processes.
