Organic Chemistry group

The scientific activity of the Laboratory of Organic Chemistry, led by Prof. Giovanna Speranza, is mainly focused on bioorganic and natural products chemistry. Specifically, the currently active research activities include the enzymatic synthesis of bio-based chemicals, such as bio-surfactants (Sugar Fatty Acid Esters and Polyglycerol Fatty Acid Esters) from renewable resources, and the valorization of protein-rich biomass through the preparation of protein hydrolysates by enzymatic methods. Moreover, the laboratory has an established track-record on the chemoenzymatic synthesis of nucleoside/nucleotide analogues, including APIs (Active Pharmaceutical Ingredients) or NCEs (New Chemical Entities), both in batch and flow systems, as well as of taste-active constituents of foods and peptide-based flavor enhancers (umami and kokumi compounds). A further research activity includes the synthesis and ion binding properties of cyclic peptides.
